With the daylight lingering longer, the air warming and the flowers blooming, it makes us in a mood for something a little lighter.  Here are some super yummy recipes for your spring!

 

Chicken Pasta Spinach Salad

Chicken Marinade:

1 pckg. “Zest Herb Teriyaki-Grill Mates” brand

1 Cup Honey

1 Cup Butter

*Add chicken breasts and marinate over night in fridge.  Grill next day on low heat.  Cube.

 

Salad:

12 oz. pckg colored rotelle pasta, cooked and cooled

1/2 cup chopped green onions

1 cup cashews

1/2 cup sunflower seeds

3 cups cubed chicken breasts (above)

1 bag baby spinach

Fresh parmesan cheese

 

Dressing:

1 cup canola oil

2/3 cup soy sauce

1/4 cup + 2 Tbls sugar

1/2 tsp pepper

 

*An hour before serving combine chicken, pasta and salad mix.  Toss with dressing just before serving.
